Ingredients

  • 2 medium oranges
  • 1 tablespoon cornstarch
  • 1 tablespoon margarine or butter
  • 1 teaspoon honey
  • 1/2 teaspoon instant chicken bouillon granules

Instructions

  1. Finely shred 1 teaspoon orange peel. Peel and section one orange over a bowl to catch juice; set aside. Squeeze juice from remaining orange. Measure orange juice; add water to equal 3/4 cup.
  2. In a small saucepan stir the juice mixture into the cornstarch. Add margarine or butter, honey, and bouillon granules. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more. Stir in orange sections and orange peel. Heat through. Serve with fish, pork, or poultry.
  3. Microwave directions: Prepare peel and oranges as above. Measure orange juice and add water to equal 3/4 cup. In a 2-cup measure stir juice mixture into the cornstarch. Add margarine or butter, honey, and bouillon granules. Microwave, uncovered, on 100% power (high) for 2 to 4 minutes or till thickened and bubbly, stirring every minute till mixture starts to thicken, then every 30 seconds. Stir in orange sections and peel. Cook 30 seconds more.
  4. Zesty Orange-Grape Sauce: Prepare as above, except stir in 1/2 cup seedless red or green grapes with the orange sections. Makes about 1 1/3 cups (twenty-one 1-tablespoon servings).
  5. Zesty Orange-Raisin Sauce: Prepare as above, except omit one orange. Finely shred 1/2 teaspoon orange peel. Squeeze juice from 1 orange and add water to equal 3/4 cup. Continue as above, adding 1/3 cup raisins to the sauce with the margarine or butter.
