Yellow Cake

Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 1 1/2 cups milk
  • 1/2 cup margarine or butter, softened
  • 1 1/2 teaspoons vanilla
  • 2 eggs

Instructions

  1. In a bowl combine flour, sugar, and baking powder. Add milk, margarine, and vanilla. Beat with an electric mixer on low speed till combined. Beat on high speed for 2 minutes. Add eggs and beat 2 minutes more. Pour into 2 greased and floured 9x1 1/2-inch round baking pans.
  2. Bake in a 375° oven for 25 to 30 minutes or till a toothpick inserted near the centers comes out clean. Cool on wire racks for 10 minutes. Remove from pans. Cool thoroughly on racks.
  3. Citrus Yellow Cake: Prepare as above, except add 2 teaspoons finely shredded orange peel or 1 teaspoon finely shredded lemon peel to the flour mixture. Fill with Lemon Filling (see recipe, page 90) and frost with Lemon or Orange Butter Frosting (see recipe, page 89), if desired.
