Ingredients

  • Wontons (see recipe, page 18)
  • 4 cups chicken broth (see recipe or tip, page 373)
  • 1/2 cup thinly biased-sliced carrot
  • 1/2 of a small green pepper, cut into 1/2-inch pieces, or 1/2 of a 6-ounce package frozen pea pods, thawed and sliced

Instructions

  1. Prepare wontons as directed, except do not fry. Freeze half of the wontons for another use.
  2. In a saucepan bring 6 cups water to boiling. With a spoon, place wontons, one at a time, into boiling water. Reduce heat. Simmer for 5 minutes. Drain. Rinse with cool water; drain again.
  3. In a saucepan combine chicken broth, carrot, and green pepper. (If using the pea pods, add to broth during the last minute of cooking.) Bring to boiling; reduce heat. Cover and simmer for 2 to 4 minutes or till vegetables are crisp-tender. Divide wontons among serving bowls. Spoon broth mixture atop.
