Venison Pot Roast

Ingredients

  • 1 2- to 3-pound venison shoulder or rump roast
  • 2 tablespoons cooking oil
  • 1 6-ounce can (3/4 cup) tomato juice
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped carrot
  • 2 teaspoons instant beef bouillon granules
  • 3 tablespoons all-purpose flour
  • 1/2 cup dairy sour cream or plain yogurt
  • 4 cups hot cooked noodles

Instructions

  1. In a Dutch oven brown meat on all sides in oil. Drain fat. Stir in tomato juice, onion, carrot, and bouillon granules. Bring to boiling; reduce heat. Cover and simmer for 1 1/2 to 2 hours or until meat is tender. Remove meat from pan.
  2. For sauce, add enough water to pan juices and vegetables to equal 2 cups. Return mixture to pan. Stir flour into sour cream or yogurt. Add to pan juices. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Season to taste. Slice venison thinly; spoon sauce over. Serve with noodles.
