Vegetables au Gratin

Ingredients

  • 1 tablespoon margarine or butter
  • 2 teaspoons all-purpose flour
  • dash pepper
  • 2/3 cup milk
  • 3/4 cup shredded American cheese
  • 2 cups cooked or canned vegetables, drained
  • 1/4 cup fine dry bread crumbs
  • 1 tablespoon margarine or butter, melted

Instructions

  1. In a medium saucepan melt 1 tablespoon margarine or butter. Stir in 2 teaspoons all-purpose flour and dash pepper. Add 2/3 cup milk all at once. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Stir in 3/4 cup shredded American cheese till melted. Stir in 2 cups cooked or canned vegetables, drained.
  2. Transfer to a 1-quart casserole. Combine 1/4 cup fine dry bread crumbs and 1 tablespoon margarine or butter, melted. Sprinkle over vegetables. Bake in a 350° oven for 20 to 25 minutes or till heated through.
