Instructions
- Preparing Homemade Pasta (see recipe, page 266) is a cinch when you mix and knead the dough with a food processor. Begin by placing the steel blade in the food processor bowl. Add all of the dry ingredients and eggs. Cover and process until the mixture forms fine crumbs about the consistency of cornmeal.
- With the processor running, slowly pour the liquid ingredients through the feed tube. Continue processing just till the dough forms a ball. Let the dough rest 10 minutes. Then roll and shape as directed in the recipe.
