Ingredients

  • 8 manicotti shells
  • 1 pound ground raw turkey
  • 1 15 1/2-ounce jar chunky garden-style meatless spaghetti sauce
  • 1 beaten egg
  • 1 cup ricotta cheese or cream-style cottage cheese, drained
  • 1 cup shredded mozzarella cheese
  • 1/2 cup snipped parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook manicotti in boiling water about 18 minutes or till tender but still firm. Drain well.
  2. In a large skillet cook turkey till no longer pink. Drain. Stir in sauce; heat through. Mix together egg, ricotta, mozzarella, parsley, and Parmesan cheese.
  3. Stuff cheese mixture into shells. Spoon one-third of the sauce mixture into a 12x7 1/2x2-inch baking dish. Place shells atop. Top with remaining sauce mixture, covering shells. Bake, covered, in a 350° oven for 25 to 30 minutes or till hot.
  4. Microwave directions: Cook manicotti as above. In a 1 1/2-quart casserole crumble turkey. Micro-cook, covered, on 100% power (high) for 5 to 7 minutes or till no longer pink, stirring once. Drain. Stir in sauce. Cook, covered, 4 to 5 minutes or till hot, stirring once. Assemble as above. Cook, covered with vented plastic wrap, on high for 10 to 12 minutes or till heated through, giving dish a half-turn once.
