Spiced Apple Rings

Ingredients

  • 4 small cooking apples
  • 1/3 cup red cinnamon candies*
  • 1/4 cup sugar

Instructions

  1. If desired, peel apples. Core and cut crosswise into 1/2-inch rings.
  2. For syrup, in a large skillet combine candies and sugar. Add 2 cups water. Cook and stir over medium heat till liquid boils and candies dissolve. Add apples to syrup. Bring to boiling; reduce heat. Simmer for 10 to 20 minutes or till tender, spooning syrup over apples occasionally.
  3. Cool apples in syrup. Cover and store in syrup in the refrigerator up to 1 month. Drain before serving.
  4. *Note: If desired, substitute 6 inches stick cinnamon, broken, for the cinnamon candies and increase sugar to 3/4 cup. Cook and stir over medium heat till boiling. Cover and simmer 5 minutes. Add apples to syrup and cook as above.
