
Sopaipillas

Ingredients
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 tablespoon shortening, margarine, or butter
- Shortening or cooking oil for deep-fat frying
- Sifted powdered sugar
- Honey
Instructions
- In a bowl combine flour, baking powder, and dash salt. Cut in shortening till mixture resembles fine crumbs. Gradually add 1/3 cup warm water (110° to 115°), stirring with a fork (dough will be crumbly). On a lightly floured surface, knead the dough for 3 to 5 minutes or till smooth. Cover; let rest 10 minutes. Roll the dough into a 12 1/2 x 10-inch rectangle. Using a fluted pastry wheel or knife, cut into 2 1/2-inch squares (do not reroll or patch).
- Fry squares, two or three at a time, in deep hot fat (425°) about 30 seconds on each side or till golden. Drain on paper towels. Keep warm in a 300° oven while frying remaining squares. Sprinkle with sugar. Serve with honey.
