Ingredients

  • 1/2 cup chopped onion
  • 1/3 cup chopped green pepper
  • 2 cloves garlic, minced
  • 2 tablespoons margarine or butter
  • 2 cups sliced okra or one 10-ounce package frozen cut okra, thawed
  • 2 cups chopped, peeled tomatoes
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground red pepper (if desired)
  • crumbled, crisp-cooked bacon (if desired)

Instructions

  1. In a large skillet cook 1/2 cup chopped onion, 1/3 cup chopped green pepper; and 2 cloves garlic, minced, in 2 tablespoons margarine or butter about 5 minutes or till tender.
  2. Stir in 2 cups sliced okra or one 10-ounce package frozen cut okra, thawed; 2 cups chopped, peeled tomatoes; 1/4 teaspoon salt; 1/8 teaspoon pepper; and, if desired, 1/8 teaspoon ground red pepper. Bring to boiling; reduce heat.
  3. Cover and simmer for 20 to 30 minutes for fresh okra (15 minutes for thawed okra) or till okra is very tender. If desired, sprinkle with crumbled, crisp-cooked bacon.
