Scrambled Eggs

Ingredients

  • 6 eggs
  • 1/2 cup milk or light cream
  • 1 tablespoon margarine or butter

Instructions

  1. In a bowl beat together eggs, milk or light cream, 1/4 teaspoon salt, and dash pepper. In a large skillet melt margarine over medium heat; pour in egg mixture. Cook, without stirring, till mixture begins to set on the bottom and around edge.
  2. Using a large spoon or spatula, lift and fold partially cooked eggs so uncooked portion flows underneath. Continue cooking over medium heat for 2 to 3 minutes or till eggs are cooked throughout but are still glossy and moist. Remove from the heat immediately.
  3. Microwave directions: In a 1 1/2-quart casserole micro-cook margarine on 100% power (high) for 35 to 40 seconds or till melted. Beat together eggs, milk, 1/4 teaspoon salt, and dash pepper. Pour into casserole with margarine. Cook, uncovered, on high for 4 to 5 minutes or till eggs are almost set, pushing cooked portions to the center after 1 1/2 minutes, then every 30 seconds. Let stand about 1 minute or till set.
  4. Herbed Scrambled Eggs: Prepare as above, except add 1 tablespoon snipped parsley and 1/8 teaspoon dried thyme, crushed, to the beaten egg mixture.
  5. Cream-Cheese Scrambled Eggs: Prepare as above, except add one 3-ounce package cream cheese with chives, cut into small cubes, to the beaten egg mixture.
  6. Cheese-Onion Scrambled Eggs: Prepare as above, except in the skillet cook 1 green onion sliced, in margarine about 30 seconds. Then add egg mixture. Add 1/2 cup shredded American cheese or process Swiss cheese after the egg begin to set. Do not use microwave directions.
  7. Mushroom Scrambled Eggs: Prepare as above, except increase margarine to 2 tablespoons. Cook 1/2 cup sliced fresh mushrooms and 1 tablespoon chopped onion in margarine. Add 1 tablespoon snipped parsley, 1/4 teaspoon dry mustard, and 1/4 teaspoon Worcestershire sauce. Do not use the microwave directions.
  8. Denver Scrambled Eggs: Prepare as above, except omit salt and increase margarine to 2 tablespoons. Cook 1/2 cup diced fully cooked ham; 1/4 cup chopped onion; one 2-ounce can mushroom stems and pieces, drained; and 2 tablespoons finely chopped green pepper in margarine. Then add egg mixture. Do not use the microwave directions.
