Scrambled-Egg Casserole

Ingredients

  • 1/4 cup chopped green pepper or sliced green onion
  • 3 tablespoons margarine or butter
  • 6 beaten eggs
  • 1 tablespoon all-purpose flour
  • 2/3 cup milk
  • 3/4 cup shredded American or process Swiss cheese (3 ounces)
  • 2 tablespoons diced pimiento
  • 1/4 cup plain or seasoned fine dry bread crumbs

Instructions

  1. In a large skillet cook green pepper or onion in 1 tablespoon of the margarine till tender. Add eggs; cook over medium heat without stirring till mixture begins to set on bottom and around edge. Lift and fold partially cooked eggs so uncooked portion flows underneath. Continue cooking till set just set. Transfer to a 1-quart casserole.
  2. In a small saucepan melt 1 tablespoon of the margarine. Stir in flour and 1/8 teaspoon pepper. Add milk all at once. Cook and stir till thickened and bubbly. Stir in cheese till melted. Stir in pimiento. Fold cheese mixture into cooked eggs.
  3. Melt remaining margarine; toss with crumbs. Sprinkle over egg mixture. Bake in a 350° oven for 15 to 20 minutes or till hot.
  4. To make ahead: Prepare as above, except do not bake. Cover and refrigerate casserole for 3 to 24 hours. Bake, covered, 25 minutes. Uncover; bake 10 to 15 minutes more or till hot.
  5. Microwave directions: In a 1-quart casserole micro-cook the green pepper or onion and 1 tablespoon margarine, covered, on 100% power (high) for 1 1/2 to 2 1/2 minutes or till tender. Add the beaten eggs. Cook on high for 2 1/2 to 3 1/2 minutes or till just set, pushing the cooked portions to the center after 1 1/2 minutes, then every 30 seconds.
  6. In a 2-cup measure cook 1 tablespoon margarine on high for 35 to 40 seconds or till melted. Stir in flour and 1/8 teaspoon pepper. Add 1/2 cup milk. Stir to combine. Cook on high for 2 to 4 minutes or till thickened and bubbly, stirring every minute till mixture begins to thicken, then every 30 seconds. Add cheese; stir till melted. Stir in pimiento. Fold cheese mixture into cooked eggs. Cook remaining margarine on high for 35 to 40 seconds or till melted; toss with crumbs. Sprinkle over egg mixture. Cook on high for 2 to 3 minutes or till heated through.
