Sauce Provençale

Ingredients

  • 3 medium tomatoes (about 1 pound)
  • 1/2 teaspoon salt
  • 1/4 cup sliced green onion
  • 1 clove garlic, minced
  • 2 tablespoons margarine or butter
  • 1/2 cup dry white wine
  • 2 tablespoons snipped parsley

Instructions

  1. Peel, seed, and chop 3 medium tomatoes (about 1 pound). Sprinkle tomatoes with 1/2 teaspoon salt; set aside.
  2. Cook 1/4 cup sliced green onion and 1 clove garlic, minced, in 2 tablespoons margarine or butter till tender but not brown. Add to mixture, 1/2 cup dry white wine, and 2 tablespoons snipped parsley. Bring to boiling; reduce heat. Boil gently 10 minutes (you should have about 1 1/4 cups). Serve with beef or pork.
