Ingredients

  • 1 3/4 cups corkscrew, medium shell, or wagon wheel macaroni
  • 1 8-ounce container soft-style cream cheese
  • 1 cup Buttermilk Dressing (see recipe, page 356) or other buttermilk salad dressing
  • 1 cup milk
  • 1 tablespoon snipped dill or 1 teaspoon dried dillweed
  • 1 15 1/2-ounce can salmon, drained, flaked, and skin and bones removed
  • 1 small cucumber, seeded and chopped (about 1 cup)
  • 1 medium tomato, seeded and chopped
  • 4 green onions, sliced

Instructions

  1. Cook macaroni according to package directions. Drain. Immediately transfer hot macaroni to a large bowl. Add cream cheese and Buttermilk Dressing. Toss till the macaroni is coated and mixture is blended.
  2. Stir in milk and dill. Add salmon, cucumber, tomato, and green onions. Toss lightly to mix. Cover and chill for 4 to 24 hours.
