  1. Always boil home-canned vegetables (except tomatoes) before tasting or using them. Bring the food to a boil and boil for 10 minutes if you live less than 1,000 feet above sea level. If you live more than 1,000 feet above sea level, add one additional minute for each 1,000 feet of elevation. Add water, if needed, to prevent sticking. If you smell an unnatural odor as the food heats, discard the food.
