Rocky Road Frosting

Ingredients

  • 1/2 cup tiny marshmallows
  • 1 square (1 ounce) unsweetened chocolate, cut up
  • 2 tablespoons margarine or butter
  • 1 1/4 cups sifted powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup tiny marshmallows
  • 1/4 cup coarsely chopped walnuts

Instructions

  1. In a medium saucepan combine 1/2 cup marshmallows, the chocolate, margarine, and 2 tablespoons water. Cook and stir over low heat till marshmallows and chocolate melt. Cool 5 minutes.
  2. Add powdered sugar and vanilla; beat till smooth. Stir in 1/2 cup marshmallows and the walnuts. Frosts top of one 8- or 9-inch cake layer.
