
Ranger Cookies

Ingredients
- 1/2 cup margarine or butter
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 cups crisp rice cereal or 1 cup rolled oats
- 1 3 1/2-ounce can (1 1/3 cups) flaked coconut
- 1 cup snipped pitted whole dates, or raisins
Instructions
- Beat margarine with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the sugars, egg, vanilla, baking powder, and soda. Beat till thoroughly combined.
- Beat in remaining flour. Stir in cereal, coconut and dates.
- Drop by rounded teaspoons onto an ungreased cookie sheet. Bake in a 375° oven about 8 minutes or till done.
- Cool on cookie sheet 1 minute. Remove; cool on rack.
