Popover Sausage

Ingredients

  • Top this hearty main dish with Cheese Sauce (see recipe, page 361) for brunch.
  • 8-ounce package brown-and-serve sausage links
  • 2 beaten eggs
  • 1 cup milk
  • 1 tablespoon cooking oil
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Grease bottom and 1 inch up the sides of an 8x8x2-inch baking dish. Set aside.
  2. Slice sausage into 1/2-inch pieces. In a large skillet brown sausage. Drain on paper towels. Meanwhile, combine eggs, milk, and oil. Stir in flour and salt. Beat with an electric mixer or rotamixer until smooth. Pour batter into prepared dish. Arrange sausage pieces in batter.
  3. Bake in a 400° oven about 35 minutes or till puffed and golden. Serve immediately with maple-flavored syrup or honey, if desired.
