
Poached Pears

Ingredients
- 1/3 cup sugar
- 1/4 cup sweet white wine or orange juice
- 2 1/2 to 3 inches stick cinnamon
- 1 teaspoon vanilla
- 4 medium pears, peeled, halved, and cored; or medium peaches, peeled, halved, and pitted
Instructions
- In a large skillet bring sugar, wine, cinnamon, vanilla, and 3/4 cup water to boiling. Add pears or peaches. Reduce heat. Simmer, covered, for 10 to 15 minutes or till tender. Remove cinnamon.
- Serve warm or chilled.
- Microwave directions: In a 2-quart casserole micro-cook sugar, wine, cinnamon, vanilla and 3/4 cup water, uncovered, on 100% power (high) 4 to 6 minutes or till boiling. Add fruit and cook, covered, on high for 4 to 6 minutes or till fruit is tender; stir once. Continue as above.
- Pears Hélène: Prepare as above using pears. Serve pears drained and chilled with vanilla ice cream and Hot Fudge Sauce (see recipe page 139).
- Peach Melba: Prepare as above using peaches. Serve peaches drained and chilled with vanilla ice cream and Fruit Sauce made with raspberries (see recipe, page 139).
