
Orange-Glazed Beets

Ingredients
- 4 medium beets or one 16-ounce can sliced beets, drained
- 1 tablespoon margarine or butter
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon finely shredded orange peel
- 1/4 cup orange juice
Instructions
- In a saucepan cook fresh whole beets, covered, in boiling water 40 to 50 minutes or till tender; drain. Cool slightly; slip off skins and slice.
- In a medium saucepan melt margarine or butter. Stir in brown sugar and cornstarch. Stir in orange peel and juice. Cook and stir till thickened and bubbly. Add sliced beets; cook and stir 3 to 4 minutes or till heated through.
