
Oil-Free Dressing

Ingredients
- 1 tablespoon powdered fruit pectin
- 3/4 teaspoon fresh or 1/4 teaspoon dried oregano, basil, thyme, tarragon, savory, or dillweed, crushed
- 1/2 teaspoon sugar
- 1/8 teaspoon dry mustard
- 1/8 teaspoon pepper
- 1/4 cup water
- 1 tablespoon vinegar
- 1 small clove garlic, minced
Instructions
- In a mixing bowl combine pectin, desired herb, sugar, mustard, and pepper. Stir in water, vinegar, and garlic. Cover and store in the refrigerator up to 3 days.
- Creamy Onion Oil-Free Dressing: Prepare as above, except increase sugar to 1 tablespoon. Stir in 1/4 cup sliced green onion and 1/4 cup plain yogurt with the water. Makes 3/4 cup (twelve 1-tablespoon servings).
