No-Cook Vanilla Ice Cream

Ingredients

  • 3 cups light cream
  • 1 1/2 cups sugar
  • 1 tablespoon vanilla
  • 3 cups whipping cream

Instructions

  1. In a large mixing bowl combine light cream, sugar, and vanilla. Stir till sugar dissolves. Stir in whipping cream.
  2. Freeze in a 4- or 5-quart ice-cream freezer according to the manufacturer's directions.
  3. No-Cook Cherry-Nut Ice Cream: Prepare as above, except stir 1 cup chopped pitted dark sweet cherries and 3/4 cup chopped walnuts into cream mixture before freezing.
  4. No-Cook Chocolate-Almond Ice Cream: Prepare as above, except reduce sugar to 1 cup. Stir one 16-ounce can (1 1/2 cups) chocolate-flavored syrup and 1/2 cup chopped toasted almonds into cream mixture before freezing.
  5. No-Cook Chocolate Chip and Mint Ice Cream: Prepare as above, except stir 1 cup miniature semisweet chocolate pieces, several drops of mint extract, and, if desired, a few drops of green or red food coloring into the cream mixture before freezing.
  6. No-Cook Strawberry Ice Cream: Prepare as above, except, in a blender container, blend 4 cups fresh or frozen-then-thawed unsweetened strawberries or blueberries till nearly smooth (You should have 2 cups.) Stir blended berries into cream mixture before freezing.
  7. No-Cook Peach Ice Cream: Prepare as above, except, in a blender container, blend 4 cups cut-up, peeled peaches till nearly smooth (You should have 2 cups.) Stir peaches into cream mixture before freezing.
  8. No-Cook Coffee Ice Cream: Prepare as above, except dissolve 2 to 3 tablespoons instant coffee crystals in the light cream mixture. Stir 1/2 cup miniature semisweet chocolate pieces into cream mixture before freezing, if desired.
  9. Butter-Pecan Ice Cream: Prepare as above, except, in a heavy skillet, cook 1/2 cup chopped pecans, 1/4 cup sugar, and 1 tablespoon margarine or butter over medium-high heat (do not stir) till sugar begins to melt, shaking skillet occasionally. Reduce heat to low and cook till sugar turns golden, stirring frequently. Immediately spread on a baking sheet lined with greased foil. Cool; break into chunks. Stir nut mixture into cream mixture before freezing.
