Kohlrabi with Honey Butter

Ingredients
- 4 small kohlrabies (about 1 pound), peeled and cut into 1/4-inch-thick julienne strips (3 cups)
- 1 medium carrot, cut into 1/8-inch-thick julienne strips (1/2 cup)
- 1/4 teaspoon finely shredded lemon peel
- 1 tablespoon lemon juice
- 1 tablespoon snipped chives or parsley
- 2 teaspoons honey
- 1/8 teaspoon pepper
- 1 tablespoon margarine or butter
Instructions
- In a medium saucepan cook kohlrabi and carrot, covered, in a small amount of boiling water for 6 to 8 minutes or till crisp-tender. Drain.
- In a bowl combine lemon peel, lemon juice, chives or parsley, honey, and pepper. Pour over hot kohlrabi and carrot; add margarine or butter. Toss to coat.
- Microwave directions: In a 1 1/2-quart casserole micro-cook kohlrabi, carrot, and 1 tablespoon water, covered, on 100% power (high) for 7 to 9 minutes or till crisp-tender, stirring once. Drain. In a bowl combine lemon peel, lemon juice, chives or parsley, honey, and pepper. Pour over hot kohlrabi and carrot; add margarine or butter. Toss to coat.
