
Hush Puppies

Ingredients
- 1 beaten egg
- 1/2 cup buttermilk or sour milk
- 1/4 cup sliced green onion
- 1 cup cornmeal
- 1/4 cup all-purpose flour
- 2 teaspoons sugar
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- Shortening or cooking oil for deep-fat frying
Instructions
- In a bowl stir together egg, buttermilk or sour milk, and onion. In another bowl combine cornmeal, flour, sugar, baking powder, baking soda, and 1/4 teaspoon salt. Add egg mixture to cornmeal mixture; stir just till moistened.
- Drop batter by tablespoons into deep hot fat (375°). Fry about 1 minute or till golden, turning once. Drain on paper towels.
- Confetti Hush Puppies: Prepare as above, except add 2 tablespoons diced pimiento and 2 tablespoons snipped parsley to egg mixture. Add 1/8 teaspoon garlic powder to cornmeal mixture.
