Hush Puppies

Ingredients

  • 1 beaten egg
  • 1/2 cup buttermilk or sour milk
  • 1/4 cup sliced green onion
  • 1 cup cornmeal
  • 1/4 cup all-purpose flour
  • 2 teaspoons sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Shortening or cooking oil for deep-fat frying

Instructions

  1. In a bowl stir together egg, buttermilk or sour milk, and onion. In another bowl combine cornmeal, flour, sugar, baking powder, baking soda, and 1/4 teaspoon salt. Add egg mixture to cornmeal mixture; stir just till moistened.
  2. Drop batter by tablespoons into deep hot fat (375°). Fry about 1 minute or till golden, turning once. Drain on paper towels.
  3. Confetti Hush Puppies: Prepare as above, except add 2 tablespoons diced pimiento and 2 tablespoons snipped parsley to egg mixture. Add 1/8 teaspoon garlic powder to cornmeal mixture.
