Hot-Milk Sponge Cake

Ingredients

  • Great with Broiled Coconut Topping (see recipe, page 90).
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 2 tablespoons margarine or butter

Instructions

  1. Combine flour and baking powder. In a bowl beat eggs with an electric mixer on high speed about 4 minutes or till thick. Gradually add sugar; beat at medium speed for 4 to 5 minutes or till light and fluffy. Add flour mixture; beat at low to medium speed just till combined.
  2. In a saucepan heat and stir milk and margarine till margarine melts; add to batter, beating till combined. Pour into a greased 9x9x2-inch baking pan. Bake in a 350° oven for 20 to 25 minutes or till a toothpick comes out clean. Serve warm or cool.
