
Herbed Tomato Soup

Ingredients
- 1/2 cup sliced onion
- 2 tablespoons margarine or butter
- 2 cups chopped, peeled tomatoes or one 14 1/2-ounce can whole, peeled tomatoes, cut up
- 1 1/2 cups chicken broth (see recipe or tip, page 373)
- 1 8-ounce can tomato sauce
- 1 tablespoon snipped basil or 1/2 teaspoon dried basil, crushed
- 1 teaspoon snipped thyme or 1/4 teaspoon dried thyme, crushed
- Dash pepper
Instructions
- In a large saucepan cook onion in margarine or butter till tender but not brown. Add fresh tomatoes or undrained canned tomatoes, broth, tomato sauce, basil, thyme, and pepper. Bring to boiling; reduce heat. Cover and simmer for 30 minutes. Cool slightly.
- Press mixture through a food mill. (Or, place mixture, half at a time, in a blender container or food processor bowl. Cover and blend or process till smooth.) Return mix to saucepan; heat through. If desired, garnish with lemon slices.
