
Glazed Chicken and Vegetables

Ingredients
- 1 2 1/2- to 3-pound broiler-fryer chicken
- Cooking oil
- 2 medium potatoes, peeled and quartered, or 6 new potatoes
- 6 medium carrots, bias-sliced into 1/2-inch pieces
- 1/2 cup honey
- 1/4 cup prepared mustard
- 2 tablespoons margarine or butter
- 2 tablespoons finely chopped onion
- 2 teaspoons curry powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon ground ginger
- 2 medium apples, cored
Instructions
- Rinse chicken and pat dry. Skewer neck skin back. Tie legs to tail. Twist wings tips under back. Place, breast side up, on a rack in a shallow roasting pan. Brush with oil. Roast chicken, uncovered, in a 375° oven for 1 hour.
- Cook potatoes and carrots in boiling water for 20 to 25 minutes or until nearly tender. Drain.
- For glaze, in a saucepan combine honey, mustard, margarine, onion, curry powder, garlic salt, red pepper, and ginger. Bring to boiling, stirring constantly. Remove from heat; set aside.
- Discard fat in roasting pan. Cut apples into wedges. Arrange potatoes, carrots, and apples around chicken in the pan. Spoon glaze over poultry, vegetables, and apples. Roast for 15 to 20 minutes more or until chicken is no longer pink, the drumsticks move easily in their sockets, and the vegetables are tender.
- Microwave directions: In a 4-cup measure combine honey, mustard, margarine, onion, curry powder, garlic salt, red pepper, and ginger. Micro-cook, uncovered, on 100% power (high) for 2 1/2 to 3 1/2 minutes or till boiling, stirring every minute. Rinse chicken; pat dry. Skewer neck skin back to tie. Twist wing tips under back. In a 3-quart casserole place chicken breast side down. Cook, covered, on high for 10 minutes. Drain. Turn chicken over. Thinly slice carrots. Arrange uncooked carrots and potatoes around chicken. Cook, covered, on 50% power (medium) for 25 minutes. Carefully drain off liquid. Quarter apples; add to casserole. Spoon honey mixture over all. Cook, covered, on medium for 15 to 20 minutes more or till chicken is no longer pink and vegetables are tender.
