Garlic Chicken

Ingredients

  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon dry white wine
  • 1 teaspoon cornstarch
  • 2 whole medium chicken breasts (1 1/2 pounds total), skinned and boned
  • 2 tablespoons cooking oil
  • 10 green onions, bias-sliced into 1-inch pieces (1 1/4 cups)
  • 1 cup thinly sliced fresh mushrooms
  • 10 cloves garlic, peeled and finely chopped (3 tablespoons), or 2 to 3 tablespoons bottled minced garlic
  • 1/2 cup sliced water chestnuts
  • 2 cups hot cooked rice or fried rice sticks

Instructions

  1. For marinade, in a bowl stir together water, soy sauce, white wine, and cornstarch. Rinse chicken and pat dry. Cut chicken into 1/2-inch pieces. Add chicken to marinade; stir to coat. Let stand room temperature for 30 minutes. Drain chicken, reserving marinade.
  2. Garlic Chicken with Zucchini: Prepare as above, except, before cooking chicken, stir-fry 1 medium zucchini, halved lengthwise and cut into 1/4-inch-thick slices (about 1 1/4 cups), for 3 minutes. Remove from wok or skillet. Return zucchini to wok with onion mixture.
  3. Chicken with Cashews: Prepare as above, except stir 1/2 teaspoon crushed red pepper in marinade. Reduce garlic to 2 cloves (or 1 1/2 teaspoons bottled minced garlic). Stir-fry 1 cup raw cashews with onion mixture.
