
Fruit Cobbler

Ingredients
- Desired filling (see below)
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon (optional)
- 3 tablespoons margarine or butter
- 1 beaten egg
- 3 tablespoons milk
Instructions
- Prepare filling. Keep hot. For topping, mix flour, sugar, baking powder, and, if desired, cinnamon. Cut in margarine till mixture resembles coarse crumbs. Combine egg and milk. Add to flour mixture, stirring just to moisten.
- Transfer filling to an 8x8x2-inch baking dish. Drop topping into 6 mounds atop hot filling. Bake in a 400° oven 20 to 25 minutes or till a toothpick inserted into topping comes out clean. Serve warm with ice cream, if desired.
- Microwave directions: In an 8x8x2-inch baking dish combine ingredients for Blueberry or Peach Filling. Micro-cook, uncovered, on 100% power (high) for 8 to 10 minutes or till thickened and bubbly, stirring every 2 minutes till slightly thickened, then every minute. Keep hot. Prepare topping as above, except reduce all-purpose flour to 3/4 cup and add 1/4 cup whole wheat flour. Drop topping into 6 mounds atop hot filling, leaving center open. Cook, uncovered, on 50% power (medium) for 8 to 10 minutes or till a cooked texture forms underneath surface of topping, turning dish once.
- Blueberry or Peach Filling: In a saucepan combine 1/3 to 2/3 cup sugar and 1 tablespoon cornstarch. Add 1/4 cup water. Stir in 4 cups fresh or frozen blueberries or unsweetened peach slices. Cook and stir till thickened and bubbly.
- Apple or Pear Filling: Cook and stir 6 cups sliced, peeled apples or pears, 2/3 to 2/3 cup sugar, 3 tablespoons water, and 1 tablespoon lemon juice till boiling. Reduce heat. Cover and simmer for 5 minutes or till fruit is almost tender, stirring occasionally. Combine 2 tablespoons water and 1 tablespoon cornstarch; add to filling. Cook and stir till thickened and bubbly.
- Cherry or Rhubarb Filling: Mix 6 cups fresh or frozen unsweetened pitted tart red cherries or sliced rhubarb, 1 to 1 1/4 cups sugar, 1/4 cup water, and 4 teaspoons cornstarch. Let stand 10 minutes (20 minutes for frozen fruit). Cook and stir till thickened and bubbly.
