Fried Cheese

Ingredients

  • 8 ounces cheddar or Swiss cheese
  • 1/2 cup cornflake crumbs
  • 1/2 teaspoon fines herbes
  • 2 beaten eggs
  • Shortening or cooking oil for deep-fat frying
  • Taco sauce (optional)

Instructions

  1. Cut the cheese into 2 1/2 x 1/2 x 1/2-inch sticks.
  2. Combine crumbs and fines herbes. Dip cheese sticks then roll in crumb mixture, coat ing evenly. Dip cheese into egg and crumbs again (Be sure cheese is completely coated with crumbs). Chill 1 to 2 hours to set the coating.
  3. In a heavy saucepan or deep-fat fryer heat 2 inches of melted shortening or cooking oil to 375°. Fry the cheese sticks, a few at a time, for 30 to 45 seconds or till golden. Drain on paper towels. Keep warm in a 300° oven while frying the remainder. Serve warm with taco sauce, if desired.
