
Fish with Beer-Cheese Sauce

Ingredients
- 1 pound fresh or frozen fish fillets or steaks
- 1/4 cup sliced green onion
- 2 tablespoons margarine or butter
- 1 tablespoon all-purpose flour
- 1/2 teaspoon dry mustard
- 1/4 teaspoon caraway seed (optional)
- 1/2 cup milk
- 1/2 cup shredded American cheese
- 3 tablespoons beer
Instructions
- Thaw fish, if frozen. Measure thickness of fish. Arrange in a lightly greased 10x6x2-inch baking dish along the range fish. (For fillets, tuck under thin edges to make range fish). Bake in a 450° oven till fish flakes with a fork. (Allow 4 to 6 minutes per 1/2-inch thickness.)
- Meanwhile, for sauce, cook onion in margarine till tender. Stir in flour, mustard, and, if desired, caraway seed. Add milk all at once. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Add cheese and beer. Cook and stir till cheese melts. Spoon over fish.
