
Egg-Salad Sandwiches

Ingredients
- 4 hard-cooked eggs, chopped
- 2 tablespoons finely chopped green onion
- 1 tablespoon diced pimiento
- 2 tablespoons mayonnaise or salad dressing
- 1 tablespoon prepared mustard or Dijon-style mustard
- 4 slices bread, or 2 small pita bread rounds or 2 bagels, split
- Lettuce leaves
Instructions
- In a bowl combine chopped eggs, green onion, and pimiento; stir in mayonnaise and mustard. Add salt and pepper to taste. Spread egg mixture on 2 slices of bread, in pita rounds, or on bagel bottoms. Top with lettuce and, if not using pitas, remaining bread slices or bagel tops.
- Greek-Style Egg-Salad Sandwiches: Prepare as above, except omit the pimiento and mustard. Stir 1/4 cup crumbled feta cheese, 1/4 lb finely chopped tomato, and 2 tablespoons chopped pitted ripe olives into egg mixture.
- California-Style Egg-Salad Sandwiches: Prepare as above, except omit pimiento. Stir 1/4 cup chopped avocado and 1/4 cup shredded Monterey Jack cheese into egg mixture. Substitute alfalfa sprouts for lettuce.
