
Couscous and Tomatoes

Ingredients
- 14 1/2-ounce can stewed tomatoes
- 1/4 cup chopped onion
- to 1/4 teaspoon ground red pepper
- 1 teaspoon garlic powder
- 1 cup couscous
- 1/4 cup sliced pitted ripe olives
- 1/4 cup snipped parsley
Instructions
- In a saucepan combine undrained stewed tomatoes, onion, pepper, garlic powder, 1 cup water, and 1/2 teaspoon salt. Bring to boiling. Stir in couscous. Cover; remove from heat. Let stand 5 minutes. Stir in olives and parsley.
- Try quick-cooking rice in place of the couscous.
