Couscous and Tomatoes

Ingredients

  • 14 1/2-ounce can stewed tomatoes
  • 1/4 cup chopped onion
  • to 1/4 teaspoon ground red pepper
  • 1 teaspoon garlic powder
  • 1 cup couscous
  • 1/4 cup sliced pitted ripe olives
  • 1/4 cup snipped parsley

Instructions

  1. In a saucepan combine undrained stewed tomatoes, onion, pepper, garlic powder, 1 cup water, and 1/2 teaspoon salt. Bring to boiling. Stir in couscous. Cover; remove from heat. Let stand 5 minutes. Stir in olives and parsley.
  2. Try quick-cooking rice in place of the couscous.
