Corned Beef Hash

Ingredients

  • Stir in some beef gravy for moister hash.
  • 2 tablespoons margarine or butter
  • 2 cups finely chopped cooked potato or loose-pack frozen hash brown potatoes, thawed
  • 1 1/2 cups finely chopped cooked corned beef or beef
  • 1/2 cup chopped onion
  • 2 tablespoons snipped parsley
  • 1 to 2 teaspoons Worcestershire sauce
  • 2 tablespoons milk (optional)

Instructions

  1. In a large skillet melt margarine. Stir in potatoes, meat, onion, parsley, Worcestershire sauce, and 1/8 teaspoon pepper. Spread evenly into skillet.
  2. Cook over medium heat for 8 to 10 minutes or till browned on bottom, turning occasionally. Stir in milk, if desired, and heat through. Serves 4.
  3. Microwave directions: In a 1 1/2-quart casserole micro-cook onion and margarine, covered, on 100% power (high) for 2 minutes. Stir in remaining ingredients except milk. Cook, covered, on high for 5 to 7 minutes or till hot; stir twice. Add milk as above, if desired.
  4. Oven directions: Cook onion in margarine till tender. Stir in remaining ingredients except milk. Transfer to an 8x1 1/2-inch round baking dish. Bake, covered, in a 375° oven for 30 minutes or till hot. Add milk as above, if desired.
