
Citrus Baked Halibut

Ingredients
- 1 pound fresh or frozen halibut steak, cut 3/4 inch thick
- 1/2 cup finely chopped onion
- 1 clove garlic, minced
- 1 tablespoon margarine or butter
- 2 tablespoons snipped parsley
- 1/2 teaspoon finely shredded orange peel
- 1/4 cup orange juice
- 1 tablespoon lemon juice
Instructions
- Thaw fish, if frozen. Arrange in an 8x8x2-inch baking dish. Cook onion and garlic in margarine till tender. Remove from heat. Stir in parsley, orange peel, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Spread over fish. Sprinkle orange juice and lemon juices over all. Bake, covered, in a 400° oven for 15 to 20 minutes or till fish flakes easily with a fork. Spoon pan juices over fish.
- Microwave directions: Thaw fish, if frozen. Arrange in an 8x8x2-inch baking dish. In a 2-cup measure micro-cook onion, garlic, and margarine on 100% power (high) for 1 1/2 to 2 1/2 minutes or till tender; stirring once. Stir in parsley, orange peel, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Spread over fish. Sprinkle 2 tablespoons orange juice and 1 teaspoon lemon juice over all. Cover with vented clear plastic wrap. Cook on high for 7 to 9 minutes or till fish is done, giving dish a half-turn once. Serve as above.
