
Chutney-Fruit Rice Salad

Ingredients
- 1 1/2 cups cooked rice
- 1 medium orange, peeled and cut into bite-size pieces
- 1 cup chopped apple
- 1/2 cup seedless grapes, halved
- 1/2 cup plain yogurt
- 1/2 cup mayonnaise or salad dressing
- 1/4 cup chutney, chopped
- 1/2 to 1 teaspoon curry powder
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- Milk (optional)
- 1/2 cup coarsely chopped peanuts
- Leaf lettuce
Instructions
- In a mixing bowl combine rice, orange, apple, and grapes.
- For dressing, combine yogurt, mayonnaise, chutney, curry powder, garlic powder, and pepper. Pour over fruit mixture; toss to coat.
- Cover; chill for 4 to 24 hours. If necessary, add milk to moisten. Before serving, stir in peanuts.
- Serve on lettuce.
- To add an extra-special touch to this curried salad, use mango chutney in the dressing.
