Ingredients

  • 1 1/2 cups cooked rice
  • 1 medium orange, peeled and cut into bite-size pieces
  • 1 cup chopped apple
  • 1/2 cup seedless grapes, halved
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise or salad dressing
  • 1/4 cup chutney, chopped
  • 1/2 to 1 teaspoon curry powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • Milk (optional)
  • 1/2 cup coarsely chopped peanuts
  • Leaf lettuce

Instructions

  1. In a mixing bowl combine rice, orange, apple, and grapes.
  2. For dressing, combine yogurt, mayonnaise, chutney, curry powder, garlic powder, and pepper. Pour over fruit mixture; toss to coat.
  3. Cover; chill for 4 to 24 hours. If necessary, add milk to moisten. Before serving, stir in peanuts.
  4. Serve on lettuce.
  5. To add an extra-special touch to this curried salad, use mango chutney in the dressing.
