Ingredients

  • 1 15- to 17-ounce can pitted dark sweet cherries, peach slices, blueberries, or crushed pineapple
  • 1 tablespoon cornstarch
  • 2 tablespoons cherry liqueur or orange liqueur

Instructions

  1. Drain fruit, reserving 2/3 cup liquid. Cut up any large pieces of fruit. In a medium saucepan combine reserved liquid and cornstarch; add fruit.
  2. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Stir in liqueur. Cool. Cover; chill thoroughly without stirring.
  3. No liqueur on hand? Substitute two tablespoons orange juice for the liqueur.
  4. Microwave directions: Drain and cut up fruit as above. In a 4-cup measure stir together reserved fruit liquid and cornstarch; add fruit. Micro-cook, uncovered, on 100% power (high) for 3 to 4 minutes or till mixture is thickened and bubbly, stirring every minute. Cook on high for 30 seconds more. Stir in liqueur. Cool. Cover; chill.
