Chicken Country Captain

Ingredients

  • 1 2 1/2- to 3-pound broiler-fryer chicken, cut up
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 clove garlic, minced
  • 1 tablespoon margarine or butter
  • 1 14 1/2-ounce can tomatoes, cut up
  • 1/4 cup snipped parsley
  • 2 tablespoons currants or raisins
  • 1 tablespoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mace or nutmeg
  • 1/4 teaspoon sugar
  • 1/8 teaspoon pepper
  • 1 tablespoon cornstarch
  • 2 cups hot cooked rice
  • 2 tablespoons toasted sliced almonds (optional)

Instructions

  1. Skin chicken, if desired. Rinse and pat dry. In a large skillet cook onion, green pepper, and garlic in margarine or butter till tender but not browned. Remove from heat. Stir in undrained tomatoes, parsley, currants or raisins, curry powder, salt, mace, sugar, and pepper. Bring to boiling.
  2. Add chicken pieces to the skillet, turning to coat. Bring to boiling; reduce heat. Cover simmer for 35 to 45 minutes or till tender and no longer pink, turning chicken once. Remove chicken from the skillet; keep warm.
  3. For sauce, skim fat from tomato mixture. Stir together cornstarch and 1 tablespoon cold water; add to tomato mixture. Cook and stir till thickened and bubbly. Cook and stir for 2 minutes more. Serve chicken and sauce with rice. If desired, sprinkle with almonds.
  4. Microwave directions: Skin chicken, if desired. Rinse and pat dry. Arrange in a 12x7 1/2x2-inch baking dish with meaty portions toward the edges of dish. Micro-cook, covered with vented plastic wrap, on 100% power (high) for 12 to 15 minutes or till tender and no longer pink, turning pieces over and rearranging after 5 minutes. Transfer chicken to a platter. Cover; keep warm.
  5. For sauce, in a 4-cup measure combine onion, green pepper, garlic, and margarine. Cook, covered, on high 2 to 3 minutes or till tender. Stir in cornstarch. Add undrained tomatoes, parsley, currants, curry powder, salt, mace, sugar, pepper. Cook, uncovered, on high 4 to 6 minutes or till thickened and bubbly, stirring every minute. Cook 30 seconds more. Serve as above.
