Chicken and Garbanzo Bean Salad

Ingredients

  • 2 cups cubed cooked chicken, turkey, or beef
  • 1 15-ounce can garbanzo beans, drained
  • 1 cup cubed cheddar or Monterey Jack cheese (4 ounces)
  • 2 stalks celery, sliced
  • 1 small green pepper, chopped
  • 2 green onions, sliced
  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons lemon juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Leaf lettuce
  • 1 medium tomato, cut into wedges

Instructions

  1. In a medium bowl combine chicken, garbanzo beans, cheese, celery, green pepper, and green onions.
  2. For dressing, stir together mayonnaise, lemon juice, chili powder, garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir into chicken mixture. Cover and chill for 2 to 24 hours.
  3. Before serving, stir mixture. Serve on lettuce-lined salad plates. Garnish with tomato wedges.
