
Cajun-Style Rice Salad

Ingredients
- 2 cups cooked rice
- 1 medium green pepper, chopped
- 1 4 1/2-ounce can shrimp, rinsed and drained
- 1/2 cup sliced fresh mushrooms
- 1 hard-cooked egg, finely chopped
- 2 tablespoons snipped parsley
- 1/4 cup salad oil
- 1/4 cup vinegar
- 1/4 cup water
- 2 teaspoons paprika
- 2 teaspoons prepared horseradish
- 1/2 teaspoon onion salt
- 1/8 teaspoon ground red pepper
- 6 lettuce leaves
Instructions
- In a mixing bowl gently stir together rice, green pepper, shrimp, mushrooms, hard-cooked egg, and parsley. Set aside.
- For dressing, in a screw-top jar combine salad oil, vinegar, water, paprika, horseradish, onion salt, and red pepper. Cover and shake well. Pour dressing over rice mixture. Toss to coat. Cover and chill for 4 to 24 hours. Serve on lettuce leaves.
