Broccoli-Stuffed Sole

Ingredients
- 4 4-ounce fresh or frozen skinless sole, flounder, or other fish fillets (about 1/4 inch thick)
- 1 cup frozen cut broccoli, thawed
- 1 beaten egg
- 8-ounce container soft-style cream cheese with chives and onion
- 1/4 cup grated Parmesan cheese
- 1/3 cup herb-seasoned stuffing mix
- 2 tablespoons milk
- 2 tablespoons dry white wine
Instructions
- Thaw fish, if frozen. For stuffing, drain broccoli, pressing out excess liquid. Combine egg, half of cream cheese, and the Parmesan cheese. Stir in broccoli and stuffing mix. Spoon one-fourth of stuffing onto one end of each fillet. Roll up; secure rolls with wooden toothpicks. Place in a 10x6x2-inch baking dish. Bake, covered, in a 350° oven for 30 to 35 minutes or till fish flakes easily with a fork.
- Meanwhile, for sauce, in a saucepan cook remaining cream cheese, milk, and wine till heated through, stirring often. Serve over fish.
- Microwave directions: Assemble fish rolls above. Micro-cook fish rolls, covered with vented clear plastic wrap, on 100% power (high) for 3 to 5 minutes or till fish flakes easily with a fork, giving the dish a half-turn once. Prepare sauce as above. Serve sauce over fish.
