
Bratwurst and Pasta Salad

Ingredients
- 4 ounces cavatelli, medium shell macaroni, or corkscrew macaroni
- 10 ounces fresh broccoli or one 10-ounce package frozen cut broccoli
- 12 ounces fully cooked smoked bratwurst, halved lengthwise and sliced
- 2 small tomatoes, cut into wedges
- 4 green onions, sliced
- 1 teaspoon dried Italian seasoning
- 1/2 cup Creamy Italian Dressing (see recipe, page 356) or other creamy salad dressing
- Leaf lettuce (optional)
- Grated Parmesan cheese (optional)
Instructions
- Cook pasta according to package directions. Drain pasta; rinse with cold water. Drain again.
- Cut broccoli into 1-inch pieces. Cook broccoli in boiling salted water for 7 to 9 minutes or till crisp-tender. (Or, cook frozen broccoli according to package directions.) Drain.
- Toss together pasta, broccoli, bratwurst, tomatoes, and green onions. Stir Italian seasoning into salad dressing. Pour dressing mixture over salad. Toss to coat. Cover; chill for 4 to 24 hours. Serve over lettuce and sprinkle with Parmesan cheese, if desired.
