Bean and Cheese Burritos

Ingredients

  • six 8-inch flour tortillas
  • 1 cup chopped onion
  • 1 tablespoon cooking oil
  • one 16-ounce can refried beans
  • 1 1/2 cups shredded cheddar cheese
  • shredded lettuce
  • salsa

Instructions

  1. Stack six 8-inch flour tortillas and wrap in foil. Heat in a 350° oven for 10 minutes to soften.
  2. In a skillet cook 1 cup chopped onion in 1 tablespoon cooking oil till tender. Add one 16-ounce can refried beans. Cook and stir till heated through.
  3. Spoon about 1/4 cup bean mixture onto each tortilla just below center. Divide 1 1/2 cups shredded cheddar cheese among tortillas. Fold edge nearest filling up and over just till mixture is covered. Fold in 2 sides just till they meet; roll up. Place on a baking sheet.
  4. Bake in a 350° oven about 10 minutes or till heated through. Serve with shredded lettuce and salsa.
  5. Bean and Cheese Chimichangas: Prepare as above, except use 10-inch flour tortillas and omit baking. Secure rolled-up tortillas with wooden toothpicks. In a 3-quart saucepan fry tortillas, 2 or 3 at a time, in 1 inch hot cooking oil (375°) about 1 minute on each side or till golden. Drain. Keep warm in a 300° oven. Remove picks. Pass dairy sour cream and guacamole.
