Bananas Foster

Ingredients

  • 4 ripe medium bananas
  • 1/3 cup margarine or butter
  • 2/3 cup packed brown sugar
  • 1/4 cup light rum
  • Vanilla ice cream

Instructions

  1. Peel bananas; halve crosswise, then lengthwise. In a large skillet or the blazer pan of a chafing dish melt margarine or butter over medium heat. Stir in brown sugar. Add bananas. Cook and stir for 3 to 4 minutes or till heated through.
  2. In a small saucepan heat rum till it almost simmers. (If desired, pour heated rum into a large ladle.) Carefully ignite rum and pour over bananas. Serve immediately over ice cream.
  3. Peach and Banana Flambé: Prepare as above, except substitute 1 cup sliced, peeled peaches (2 medium) for 1 banana. Sprinkle each serving with 1 tablespoon toasted coconut.
