
Bananas Foster

Ingredients
- 4 ripe medium bananas
- 1/3 cup margarine or butter
- 2/3 cup packed brown sugar
- 1/4 cup light rum
- Vanilla ice cream
Instructions
- Peel bananas; halve crosswise, then lengthwise. In a large skillet or the blazer pan of a chafing dish melt margarine or butter over medium heat. Stir in brown sugar. Add bananas. Cook and stir for 3 to 4 minutes or till heated through.
- In a small saucepan heat rum till it almost simmers. (If desired, pour heated rum into a large ladle.) Carefully ignite rum and pour over bananas. Serve immediately over ice cream.
- Peach and Banana Flambé: Prepare as above, except substitute 1 cup sliced, peeled peaches (2 medium) for 1 banana. Sprinkle each serving with 1 tablespoon toasted coconut.
