
Banana Cake

Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 cup mashed ripe banana
- 1/2 cup buttermilk or sour milk
- 1/2 cup shortening
- 2 eggs
- 1 teaspoon vanilla
Instructions
- In a bowl combine flour, sugar, baking powder, baking soda, and 1/2 teaspoon salt. Add banana, buttermilk, shortening, eggs, and vanilla. Beat with an electric mixer on low speed till combined. Beat on medium speed for 3 minutes.
- Pour batter into 2 greased and floured 8x1 1/2- or 9x1 1/2-inch round baking pans. Bake in a 350° oven for 30 to 35 minutes or till a toothpick comes out clean. Cool on racks for 10 minutes. Remove from pans; cool on racks.
